Vegetable Jiaozi [Food Processor Attachment]
Jiaozi are Chinese dumplings filled with meat and vegetables. They are often enjoyed during the Chinese New Year.

Ingredients
- For the Dough:
- 2 cups (250 g) all-purpose flour
- ½ cup (120 ml) water
- For the filling:
- 8 stalks (260 g) celery stalk, halved
- 5 (25 g) spring onions, white parts only
- ¼ head (350 g) savoy cabbage, chopped
- 1 small (120 g) carrot, quartered
- 1 garlic clove, peeled
- 1 piece (5 g) fresh ginger root, sliced
- 2 Tablespoons (30 ml) Gochujang
- 2 teaspoons Chinese five-spice powder
- 2 Tablespoons (30 ml) soy sauce
Directions
- Fit the Food Processor with the Multi-Use Blade.
- For the Dough: Place the flour and water into the Vitamix container and secure the lid. Start the machine and process for 15 seconds. Remove from the container and wrap the dough. Let rest 15 minutes.
- Place celery, cabbage, carrot, garlic, ginger, and spring onions into the Vitamix container and secure the lid. Pulse the mixture 15 times until evenly chopped or desired consistency is reached. Heat a large sauté pan over medium high heat. Add 1 Tablespoon of oil and then the cabbage mixture. Sauté allowing the moisture to come out of the vegetables, add the five spice and gochujang and stir to combine. Deglaze with the soy allow the soy to evaporate. Chill the mixture.
- To make the Jiaozi: Roll the dough into 1 long, thin column and then portion it into 1 inch (2.5cm) pieces. Roll these dough balls into thin pancakes about 2½ inches (6 cm) round. Fill with ½ Tablespoon (10–15g) of pork mixture and then seal. Repeat with remaining dough balls and filling. In a steamer, steam the Jiaozi for 15 minutes.
- Nutrition Note:Making your own dumplings from scratch puts you in control of the ingredients and your food intake. Modify the salt and fat to your needs. Up the veggies if you want! As is, these are packed with nutrients and much lower in fat and salt than the store-bought version. Enjoy not only eating these, but making them with friends and family!
Chef's Notes
- This is a great recipe to make with friends or family. Depending on how many people are helping, this could take up to 2 hours. You can freeze the Jiaozi and then cook them at a later time. Make the filling your own by adding more spices or using different meat or vegetables.
