Walnut Biscuits with Cinnamon Sugar

There’s nothing like the smell of fresh biscuits. Add cinnamon sugar icing and you have a kid-approved breakfast in no time.

Ingredients

  • ½ teaspoon ground cinnamon
  • 2 Tablespoons granulated sugar
  • 1 cup (125 g) all-purpose flour
  • 1 cup (120 g) walnuts
  • 1 egg egg
  • ¼ cup (25 g) powdered sugar
  • ¼ teaspoon vanilla extract
  • 1 cup (225 g) butter
  • golden caster sugar
  • ½ teaspoon ground cinnamon

Directions

  1. Preheat oven to 355°F (180°C). Grease and line 2 baking sheets with parchment paper.
  2. Place butter, vanilla and powdered sugar into the Vitamix Container and secure lid.
  3. Select Variable 1.
  4. Turn machine on and slowly increase speed to Variable 4. Blend for 10-15 seconds or until micture has creamed.
  5. Add egg to the Vitamix Container and secure lid.
  6. Select Variable 1.
  7. Turn machine on and slowly increase speed to Variable 4. Blend for 10 seconds.
  8. Place walnuts and flour into the Vitamix Container and secure lid.
  9. Select High.
  10. Turn machine on and off 8 to 10 times to pulse until flour is moistened. Use the tamper to press ingredients into the blades if needed.
  11. Divide mixture into 16 balls.
  12. Place onto baking sheets and flatten slightly with the palm of your hand.
  13. Bake for 12-15 minutes or until golden brown.
  14. Combine sugar and cinnamon in a bowl. While warm, roll biscuits in mixture to coat. Plae onto a cooling tray and allow to cool.
  15. Store in an air-tight container.
