Zero Proof Cucumber Gimlet
Up your mixed drink game with this easy-to-make cocktail. Hold the liquor and make a mocktail that tastes just as delicious. Try this for your Dryuary— “dry January” — and impress your friends.
Ingredients
- ½ cup (120 ml) water
- 4 limes, peeled
- ¼ cup (60 ml) honey
- 2 Tablespoons (30 ml) champagne vinegar
- 6 slices English cucumber, 1/4" thick
- 2 cups (260 g) ice cubes, plus extra for serving
- ½ cup (120 ml) club soda
Directions
- For the base: Place the water, limes, honey and champagne vinegar into the Vitamix blending container in the order listed and secure the lid. Start the blender on its lowest speed and increase quickly to its highest speed. Blend for 60 seconds. Strain if desired.
- For the cocktail:Place 1 cup of the blended base into the Vitamix AER container with cucumber and ice. Secure lid. Blend on highest speed for 25 – 30 seconds. Fill two cocktail glasses with ice, split the blended mixture between the two glasses and top with club soda. Stir and garnish with a slice or peeling of cucumber.
- The gimlet can be served over ice or simply in a chilled gimlet glass.
Chef's Notes
- Adding a touch of vinegar to the cocktail takes it to another level adding a sour/umami punch that is needed without the alcohol present.This can be completely strained or served as is, just know it will be a bit pulpy if unstrained.Looking to lighten this drink up a bit more? Try reducing the honey or replacing with a plant based zero calorie sweetener like stevia or monk fruit.
