Cashew Milk

Create fresher, more flavorful cashew milk at home. This recipe yields 4 1/2 cups of milk from just 1 cup of nuts.

Ingredients

  • 720 ml (3 cups) water
  • 140 g (1 cup) cashews
  • 75 g (10 Tablespoon) dates, pitted
  • Tablespoon (¼ teaspoon) ground cinnamon

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 40 seconds.

Chef's Notes

For even more creaminess, soak cashews for at least 4 hours. You may strain the nut milk through a fine mesh strainer or nut milk bag, if desired. Store in an airtight container in the refrigerator for up to a week. Shake before serving. Our frozen dessert recipes will work perfectly by swapping this out for the liquid component.
