Orange Sesame Dressing

This salad dressing goes great with a hearty green salad but could also be used with a whole grain salad.

Ingredients

  • 60 ml (¼ cup) apple cider vinegar
  • 500 g (2 large) oranges, peeled
  • 30 g (¼ cup) sesame seeds, toasted, divided use
  • 40 g (⅓ cup) cashews, raw, unsalted
  • (1 Tablespoon) fresh lemon juice

Directions

  1. Place the apple cider, oranges, ⅛ cup (15g) toasted sesame seeds, cashews, and lemon juice into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed, using the tamper to press ingredients towards the blades. Blend for 30 seconds or until your desired consistency. Top the dressing with the additional ⅛ cup of toasted sesame seeds.

  2. Start the blender on its lowest speed, then quickly increase to its highest speed.  Blend for 30 seconds or until your desired consistency.
