Apple Cinnamon Date Syrup

This simple combination of seasonal fruit and spices is sweetened with dates. After you've tried this you'll never go back to the bottled stuff again.

Ingredients

  • ¾ cup (180 ml) cold water
  • 5 (60 g) medjool dates, pitted
  • 2 medium (250 g) apples, cored
  • 1 stick cinnamon, about 3 inches

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Run the Dips & Spreads Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 60 seconds, using the tamper to push ingredients toward the blades.
  3. Pour into a medium sauce pot and simmer over medium heat for approximately 15 minutes or until reduced by 1/3. Turn heat off and let cool for 10 minutes before pouring into a container, then placing the the refrigerator.

Chef's Notes

  • This syrup is ready to use right out of the container. Simmer a little longer to remove some of the water content and make the syrup slightly thicker and sweeter.This is an excellent home-made alternative to traditional sweeteners.
