Black Bean Soup

Black Bean Soup

Ingredients

  • 3 cups (720 ml) low sodium vegetable broth
  • 1½ cups (390 g) black beans, canned, drained and rinsed; divided
  • 1½ cups (380 g) canned chickpeas, rinsed, drained
  • ⅛ (20 g) small onion, peeled
  • 1 garlic clove, peeled
  • ½ lime, peeled
  • 1 small jalapeño, seeded, halved
  • 1 teaspoon ground cumin
  • ⅓ medium (40 g) red bell pepper, sliced, seeded
  • 1 teaspoon salt, optional
  • 1 teaspoon ground black pepper

Directions

  1. Place vegetable stock, ¾ cup (155g) black beans, chickpeas, onion, garlic, lime, jalapeño pepper, and seasonings into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed.
  3. Blend for 5 minutes 45 seconds, or until heavy steam escapes from vented lid.
  4. Reduce speed to Variable 3 and remove the lid plug. Add the remaining black beans and red bell pepper through the opening.
  5. Blend for an additional 5 seconds. Serve immediately.

Chef's Notes

Jalapeño may be omitted if you do not want any spice in your soup. Try adding roasted corn kernels as a garnish to give some crunch to your soup. Roasting the onion and garlic can add depth of flavor to this soup. Additional vegetable broth may be added initially or blended in at the end if you desire a thinner soup.

  • ¾ cup (190 g) canned chickpeas, drained and rinsed
  • ⅛ Tablespoon (10 g) small onion, peeled
  • 1 garlic clove
  • ¼ lime, peeled
  • ½ small jalapeño, halved, seeded
  • ½ teaspoon ground cumin
  • ½ (60 g) medium red bell pepper, sliced, seeded
  • 1 pinch salt, optional
  • 1 pinch ground black pepper

Directions

  1. Place vegetable stock, ⅓ heaping cup (80g) black beans, chickpeas, onion, garlic, lime, jalapeño pepper, and seasonings into the Vitamix container in the order listed and secure lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed.
  3. Blend for 7 minutes 30 seconds, or until heavy steam escapes from vented lid.
  4. Reduce speed to Variable 3 and remove the lid plug. Add the remaining black beans and red bell pepper through the opening.
  5. Blend for an additional 5 seconds. Serve immediately.
