Blackberry Iced Tea Bramble

Green tea, blackberries, mint, and lime all come together as a base to this cocktail (or mocktail.) Whether you hold the alcohol or not, this gives you both versions to suit your needs. Ginger beer and tonic finish these for a bit of effervescence.

Blackberry Iced Tea Bramble

Ingredients

  • ¾ cup (180 ml) unsweet green tea, chilled
  • 1 cup (135 g) fresh blackberries
  • 1 slice lime, ⅛", with peel
  • 6 fresh mint leaves
  • 3 Tablespoons (45 ml) honey
  • 3 fluid ounce (90 ml) London Dry gin
  • 1 cup (240 ml) tonic water [or ginger beer], divided use

Directions

  1. Place all ingredients except for tonic water (or ginger beer if making the mocktail version) into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 45-55 seconds, or select Smoothie program and allow the machine to complete the programmed cycle.
  3. Fill each rocks glass ¾ of the way with ice. Pour ⅔ cup (160ml) blackberry mixture over ice, topping with ⅓ cup (80ml) tonic water for a cocktail, stirring to incorporate.

Chef's Notes

To make this drink non-alcoholic, simply omit the gin and top with ginger beer instead of tonic water.
