Broccoli, Oat, and Parmesan Cakes

These broccoli cakes use the whole stalk of broccoli, eliminating food waste and creating a savory, flavorful meal.

Ingredients

  • ⅓ cup (40 g) flax meal
  • ½ cup (120 ml) water
  • 1 pound (454 g) broccoli florets, cut evenly
  • 1 Tablespoon (200 g) medium white onion, peeled, quartered
  • 2 Tablespoon garlic, peeled
  • 1 cup (100 g) rolled oats
  • 1 Tablespoon paprika
  • 1 teaspoon dried thyme
  • 2 teaspoons kosher salt, optional
  • 1 teaspoon ground black pepper
  • ½ cup (65 g) vegan parmesan cheese
  • 2 Tablespoons extra virgin olive oil

Directions

  1. Set up a steamer pot with water, a basket, and a lid set over high heat on the stovetop. While the water is heating, combine the flax meal and ½ cup water, stirring until well combined. Set aside.
  2. Cut apart the broccoli, including the stems if available, and place into the steamer basket. Steam for 4 to 5 minutes, or until the broccoli is tender. Remove and shock vegetables in a bowl of ice water. Once chilled, drain and dry completely.
  3. Place the steamed broccoli (once chilled,) flax mixture, onion, garlic, oats, paprika, thyme, salt (optional), black pepper, and vegan Parmesan cheese into the Food Processor Work Bowl fitted with the Multi-Use Blade and secure the lid.
  4. Pulse the mixture 10 to 12 times, or until items are evenly chopped and incorporated.
  5. Stop the machine, remove the lid, and scrape down the sides of the Work Bowl. Secure the lid and pulse an additional 3 to 5 times.
  6. Heat a non-stick skillet over medium heat, adding olive oil and heating until shimmering.
  7. Portion broccoli cake mixture into 5-ounce (142g) cakes and cook until golden brown, flipping and cooking both sides evenly. If needed, finish cooking in a 350°F (175°C) oven for 15 to 20 minutes.

  • Begin this recipe with the things that take the longest first, following up with the quicker items as you wait for things to come together. This will allow you to complete a nice meal in under 60 minutes, making it a quick and delicious lunch or dinner.
