Winter Spice Vinaigrette
Roasted garlic add depth of flavor to this wintery dressing.
Ingredients
- ¾ cup (180 ml) apple cider vinegar
- 2 Tablespoons (30 ml) Dijon mustard
- 8 roasted garlic cloves
- 1 small (30 g) shallot, peeled, roasted
- 3 medjool dates, pitted [or honey to taste]
- 1 Tablespoon Winter Spice Seasoning
- 1 sprig fresh rosemary, leaves
- 2 cups (480 ml) extra virgin olive oil
Directions
- Place all ingredients except olive oil into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed, using the tamper to press ingredients toward the blades.
- Blend for 30 seconds.
- Reduce to Variable 6, remove lid plug and add oil through lid plug opening.
- Replace lid plug and blend an additional 10 seconds.
