Dark Chocolate Winter Spice Pudding
Creating puddings in the Vitamix is so simple, you will never use a stove top again.
Ingredients
- For the Pudding:
- 660 ml (2 ¾ cups) soy milk [or almond milk], lukewarm
- 60 ml (¼ cup) honey
- 140 g (1 cup) dark chocolate chips
- 15 g (2 Tablespoons) Winter Spice Seasoning
- (2 packages) gelatin, powdered
- To Serve:
- 190 ml (⅔ cup) Fig Jam
- 240 ml (1 cup) Whipped Cream [or coconut whipped cream], optional
- pistachios, lightly toasted and chopped
Directions
- Place ingredients into the Vitamix container in the order listed. Secure the lid.
- Run the Hot Soup Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 7 minutes, 30 seconds.
- Portion equally into 8 ounce ramekins and place in the refrigerator for 3–4 hours until set.
- Top with fig jam, whipped cream and garnish with chopped toasted pistachios.
- Nutrition Note: Thanks to the soy milk used in this recipe, we've got a little protein and nutrient packed dessert here. If soy is not your preferred milk, you can sub with any other variety, though almond and oat will be lower in protein than soy or cow's milk.Dark chocolate is another ingredient that delivers a lot of nutrients including antioxidants, fiber, minerals, and vitamins. Just remember when you move from dark chocolate to dark chocolate chips - you're adding fat and sugar. When buying your dark chocolate chips, the ones with the higher percentage of dark chocolate have less added sugar and fat. Feel free to play around with ingredients to see what tastes best to you. You might think it's automatically best to go with the highest percentage you can find for the nutrition, but this product can be very bitter. It's ok to choose the more indulgent dark chocolate chips, just enjoy them in moderation!
