Ginger Greens Juice
A delicate mix of cucumbers, celery, apples, and kale will give you a little extra pick-up that will keep you feeling refreshed and rejuvenated.
Ingredients
- ½ cup (120 ml) water
- 1 (300 g) cucumber
- ½ (80 g) celery stalk
- 2 medium (375 g) apples, seeded, halved
- 2 cups (60 g) kale
- 1 Tablespoon (5 g) fresh ginger root, peeled
Directions
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Start the machine and slowly increase to its highest speed.
- Blend for 30-45 seconds, using the tamper to press the ingredients into the blades.
- If using a programmed machine press the Smoothie button and allow the programmed cycle to complete.
- Strain through a nut milk bag. Store in refrigerator. Use within 2 days.
Notes
Filtering the juice will remove the fiber, try drinking this juice as a smoothie when you are in a hurry. Ginger adds great flavor but adding too much can over power. Start with a small small amount and add more to the blend after you have tried it. This blend can easily be doubled in the Vitamix 64 ounce containers.

I made this today exactly as written and the flavor was perfect..I don't have a juicer so I used my blender then sieved through mesh strainer. I ended up with about a cup of liquid. The mesh strainer didn't do a whole lot as far as getting excess liquid even though I pushed down with rubber spatula. I went to fabric store and bought .5 yards of Swiss voile for $3 which I will use to make my own bag (similar to a nut milk bag according to online research)

Yummmmm!!!
I am so happy I took the plunge and purchased a Vitamix For the last week I have been making all kinds of delicious health dips, soups and smoothies. This Green recipe I just had and It was great! I only sifted it because my milk bag has not arrived yet. I am ok though because all it means is I consumed more fiber which is what I need for healthy digestion. I am a happy camper.

I didn't have celery on hand, but used the other ingredients listed. After tasting, my fiancé and I agreed that a lemon juice would add some much needed tartness. Just a quick squeeze was enough to take this drink to another level.

Loved this!
I subbed spinach for kale as I didn’t have any on hand & I didn’t strain as I found it liquified enough and I like retaining the benefit of the fibre in the foods. Great recipe.

My first green "juice"
I didn't have celery and used carrots instead. I also didn't read about filtering it.... Anyway, I enjoyed it nonetheless. I ran it through the smoothie setting on my 780 as I wanted it as smooth as possible. I'd recommend using 3/4 cup water and 4+ ice cubes to prevent it getting warm and keeping it from getting too thick, if you don't want to filter it. Looking forward to making it again!

Delicious detox
This is a wonderful, simple recipe. I generally switch out the kale for a baby greens mix, and de-seed the cucumber prior to adding it. I also don't strain it so it ends up more of a smoothie consistency, but I'm in love with this recipe! Other variations: swapping a banana for the second apple, and kiwi instead of celery.

This is such a great juice recipe! I added frozen pineapple to add sweetness with some zing and it was perfect. Really refreshing and light.
